Oatmeal Butterfinger Cookie Sandwiches

COOKIES
INGREDIENTS:
1 cup butter softened
2 cups brown sugar
2 eggs
1 tsp vanilla
2 cups large rolled oats
2 cups all purpose flour
1/2 tsp baking soda
1 tsp salt
2 regular size Butterfinger candy bars chopped
Caramel
INSTRUCTIONS:
In a large mixing bowl, cream butter and brown sugar. Mix in eggs and vanilla.
In a separate bowl, use a whisk to combine toasted oats, flour, baking soda and salt.
Add oat mixture to the wet ingredients and mix until well combined. Added about 3/4 of the chopped Butterfinger bars. (the remainder will be used to garnish)
Using a cookie scoop or spoon, drop dough onto a parchment lined cookie sheet and flatten them using the back of a spoon. They don’t spread out much, so be sure to flatten them.
Place on a cookie sheet, and bake at 375 for 8-10 minutes, until golden and fragrant. Remove and let cookies cool on the sheet for about 2 minutes, then transfer to a wire rack to cool completely, they will crisp up as they cool.
While cookies are cooling, prepare icing filling, if you are making sandwich cookies.
ICING FILLING (optional)
Ingredients:
2 1/2 cups confectioners' sugar
1/2 cup vegetable shortening
pinch of table salt
1 teaspoon Pure Vanilla Extract
2 teaspoons cold water, or enough to make the filling cohesive
INSTRUCTIONS:
Beat together the sugar, shortening, salt, and vanilla. The mixture will seem very dry at first, but will eventually begin to clump together.
Add the water, beating until smooth and spreadable. The filling should be stiff, but not so stiff that you can't flatten it when you sandwich it between your cookies.
COMPLETING SANDWICH COOKIES
Add icing to the back of one cookie. Take another cookie and place on top of the iced cookie. Drizzle caramel on sandwich, then add chopped Butterfinger bars to complete the sandwich.
If not using the icing, drizzle caramel, then add chopped Butterfinger bars on the tops of the single cookies.
