Yo it’s June and Chicago was legit cold till like last week - wtf. Anyway, I was craving congee and decided to swap in oatmeal instead of rice to be a little healthier ;). Surprisingly fire and I really enjoyed it. It’s also dead easy to make if you’ve got a @zojirushiamerica with the porridge setting.
As for nutrition, it’s a bit high on sodium (lol) but between the @bobsredmill protein oats and chicken bone broth, it’s got a solid protein + fiber base. Add your fave protein or veggies to level it up.
Oh and I like topping it with chili crisp. Been loving the @zindrew X Batch I found at my local store—brings the heat. I usually also top with some fried onion and garlic but my dumbass forgot to film it 😂
Recipe is in the comments. Tag me if you try it. ✌🏽
Okay, so you've tried my go-to oatmeal congee recipe, and hopefully, you loved it as much as I do! But let's be real, sometimes you want to switch things up or just understand why this healthy swap works so well. I initially made the switch to oatmeal for my congee purely out of convenience and a desire for something a bit lighter, but it quickly became a staple. There are so many ways to customize this dish, truly making it your own comfort food. First, let’s talk about why oatmeal is such a fantastic alternative to traditional rice in CONGEE. For me, it's a triple threat: nutrition, speed, and texture. Rolled oats, especially protein-fortified ones like Bob's Red Mill, are naturally higher in fiber and often protein than white rice. This means you feel fuller for longer, which is a huge win for a healthy meal. Plus, oats cook way faster than rice, especially if you're using quick oats or even steel-cut oats (though steel-cut will take a bit longer than rolled). The texture is wonderfully creamy and comforting, mimicking that classic congee consistency but with a slightly different, equally delightful mouthfeel. It’s less sticky and more velvety, in my opinion. Beyond the basic chicken bone broth and chili crisp that I swear by, the topping possibilities for your oatmeal congee are endless. This is where you can really get creative! If you're looking for more protein, consider adding a soft-boiled or fried egg, shredded chicken (leftovers work great!), pan-fried tofu, or even some crispy tempeh. For a burst of freshness and extra nutrients, finely chopped scallions are a must, along with a sprinkle of fresh cilantro. To add a savory crunch, try toasted sesame seeds, crushed peanuts, or even some fried shallots. A drizzle of sesame oil or a splash of soy sauce can also elevate the flavors. I’ve even experimented with a touch of pickled ginger for a tangy kick – trust me, it works! What if you don't have a Zojirushi with a porridge setting? No problem! While my Zojirushi makes it incredibly easy, you can absolutely make delicious oatmeal congee on the stovetop. The key is low and slow cooking with frequent stirring to prevent sticking and achieve that creamy consistency. Use a heavy-bottomed pot and aim for about a 1:4 or 1:5 ratio of oats to liquid (broth/water), depending on how thick you like your congee. Bring it to a gentle simmer, then reduce the heat to low, cover, and let it cook for 20-30 minutes, stirring every 5-7 minutes. If it gets too thick, just add a splash more broth until it reaches your desired consistency. It’s a little more hands-on, but still super straightforward. Finally, don't be afraid to experiment with different broths or even make it vegetarian or vegan. A rich mushroom broth or a dashi-based broth can add incredible depth of flavor. For a vegetarian version, swap the chicken bone broth for vegetable broth and load up on mushrooms, spinach, and grated carrots. You can even add a swirl of nutritional yeast for a cheesy, umami boost. This oatmeal congee is so versatile; it adapts to whatever you’re craving or whatever ingredients you have on hand. It’s become my ultimate comfort food, especially when Chicago weather decides to surprise us with a cold snap in June! Give these ideas a try and let me know your favorite variations – I’m always looking for new inspiration!
