This was originally supposed to be a riff on pajeon that my buddy @peterhoilkang and I were messing around with during his visit to Chicago. But we quickly learned it’s hard to make a uniform, crispy dosa with larger cuts of green onion. Settled with making this variant and adding a little sauce for dipping (chili crisp, sesame oil, and soy sauce).
