Larb is a traditional Thai salad that combines various fresh ingredients with a tangy and spicy dressing, making it a flavorful yet healthy meal choice. In this recipe, glass noodles add a unique texture while minced chicken and shrimp provide a lean source of protein. Using minimal oil keeps the dish light without sacrificing taste. The seasoning components such as fish sauce, lime juice, chili flakes, and roasted rice powder are integral to authentic larb. Fish sauce imparts a salty depth, lime juice balances it with acidity, chili flakes add heat, and roasted rice powder offers a nutty crunch and helps thicken the dressing. Fresh herbs like coriander and spring onion bring brightness and freshness. It’s worth noting that blanching shrimp and glass noodles before mixing ensures the noodles remain tender but firm, and the shrimp stays juicy. Stir-frying minced chicken with a little water rather than oil is a clever technique to reduce fat content while keeping it moist and flavorful. For variations, you could substitute minced chicken with lean pork or turkey or add more vegetables like finely chopped cabbage or cucumber to increase fiber. Serving this larb as part of a meal with sticky rice or wrapped in lettuce leaves can make it more filling. Overall, this spicy larb glass noodle recipe is perfect for anyone looking for a light, fresh, and tasty Thai-inspired dish that can be prepared quickly and enjoyed any time. It’s ideal for those mindful of oil intake but unwilling to compromise on the authentic zest and texture of classic larb!
