Gut-Friendly Date Snickers Bark 🍫✨

Ingredients:

• 2½ cups soft pitted dates (about 40, tightly packed)

• ⅓–½ cup peanut butter

• 3–4 tbsp date syrup (optional, for that caramel-like center)

• ½ cup Spanish salted peanuts (with skin)

• ¾ cup dark chocolate (I used 80% cocoa for less sugar + more polyphenols)

• 1 tsp coconut oil

Directions:

1️⃣ Line a pan with parchment paper.

2️⃣ Arrange dates in a tight layer. If they’re dry, soak for a few minutes.

3️⃣ Flatten dates using a rolling pin or the bottom of a glass to form the base.

4️⃣ Spread peanut butter evenly over the date layer.

5️⃣ Drizzle with date syrup (optional but highly recommended).

6️⃣ Sprinkle with peanuts.

7️⃣ Melt chocolate with coconut oil, then pour over the top.

8️⃣ Chill until set, then slice or break into pieces.

Research on dates in pregnancy shows that eating about six whole dates per day starting around 36–37 weeks of gestation and continuing daily until labor is associated with improved cervical ripening, a shorter first stage of labor, and a reduced need for induction. Considering my first baby came in 3 hours I think I’ll go ahead and keep eating these for baby number 2!
