4-5

Ingredient:

- 6 eggs, I use organic brown eggs

- mayonnaise (greek yogurt for healthier option)

- paprika

- salt & pepper

Detailed Steps:

- put cold water in a pot roughly 1in above the eggs

- bring water to a boil then remove from heat and let sit for 10-12 mins

- give your eggs an ice bath until fully cooled

- mix your ingredients together & measure with your heart. If you feel like you need a rough guess on measurements 👇🏼

- 1/3 cup mayo

- tsp mustard

- 1/4 tsp paprika

- salt & pepper to taste

- when your done, store in the fridge in an air tight container!

Additional tips/notes:

I personally like to give my bread a little toast before assembling the sandwich🙌🏼

I love adding sweet pickles (or relish, but I prefer chopping pickles myself)

In this recipe I used mini sweet pickles and did 1 pickle per egg, so 6 mini sweet pickles😋

... Read moreEgg salad sandwiches are a classic lunch choice, but making them healthier can elevate this seasoned favorite. Start with organic brown eggs, packed with nutrients. Instead of traditional mayonnaise, use Greek yogurt for a protein boost and lower calorie count. For a zesty flavor, opt for Dijon mustard and a sprinkle of paprika. Incorporating cucumbers, as suggested by recent trends, adds a refreshing crunch. You can also add ingredients like spinach or avocado for added nutrition. Toast your whole wheat bread for a perfect texture that pairs beautifully with the creamy egg salad. Finally, consider enhancing your sandwich with flavors from sweet pickles or mustard sauce, which can complement the salad's tanginess. When meal prepping, store your salad in an airtight container to keep it fresh for up to three days. This recipe aligns perfectly with the growing desire for easy, healthy lunches that don’t compromise on flavor.
