Ingredients:
- **Pasta:**
- 1 pound rigatoni pasta
- **Spicy Vodka Sauce:**
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3-4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup vodka
- 1 cup heavy cream
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (plus more for serving)
- Fresh basil leaves for garnish
Instructions:
1. **Cook the Pasta:**
- Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
2. **Make the Sauce:**
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
- Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.
- Pour in the crushed tomatoes and vodka. Simmer for about 10-15 minutes, allowing the sauce to thicken slightly.
- Reduce the heat to low and stir in the heavy cream, salt, black pepper, and Parmesan cheese. Mix well and let it simmer for another 5 minutes.
3. **Combine Pasta and Sauce:**
- Add the cooked rigatoni to the sauce, tossing to coat. If the sauce is too thick, stir in some reserved pasta water until you reach your desired consistency.
4. **Serve:**
- Plate the spicy vodka rigatoni, garnishing each serving with extra Parmesan cheese and fresh basil leaves.
