Homemade Buttermilk Cornbread

1 1/4 cups corn meal

1 cup all-purpose flour

3 tablespoons sugar

4 teaspoons baking powder

1/2 teaspoon salt

1 cup milk (or buttermilk)

1 large egg

1/4 cup vegetable oil

Combine all dry ingredients. Combine all wet ingredients. Combine both dry and wet ingredients together but do not over mix. Divide into greased muffin tins or preheated cast iron skillet oiled with butter. Bake in 425 degree oven for 20 minutes or until golden brown and passes the toothpick test.

Optional: drizzle with melted butter or honey butter.
