Lasagna soup is a fantastic twist on the classic layered Italian dish, bringing all those familiar flavors into a hearty, warming bowl perfect for chilly days. Using broken lasagna noodles instead of whole sheets creates a more manageable soup texture while still offering that comforting pasta bite everyone loves. Including Tony’s Seasoning adds a unique and bold flavor profile often found in southwestern cooking, elevating the soup beyond traditional Italian herbs. This seasoning pairs especially well with the garlic, basil, parsley, Italian seasoning, and a hint of red pepper for a subtle kick. Cooking the lean ground beef with the diced onions and garlic forms a savory base, and browning the meat properly ensures the soup has depth and richness. The combination of marinara and chicken broth makes the soup both tomato-rich and light enough to sip, while the addition of heavy cream at the end adds a velvety smoothness that balances the acidity and spices. Tossing in fresh spinach toward the end not only boosts nutritional value but also brightens the dish with fresh greens without overpowering the other flavors. For an even more authentic experience, you can garnish the soup with freshly grated Parmesan cheese and some crushed red pepper flakes if you enjoy extra heat. This lasagna soup is perfect for meal prepping since it reheats well and the flavors meld even more with time. Pair it with a crisp green salad or garlic bread for a complete meal. Experimenting with variations like substituting ground turkey or adding mushrooms can keep this recipe fresh and suited to your preferences. Overall, lasagna soup is a convenient, crowd-pleasing dish that captures the essence of lasagna in a satisfying soup form, ideal during soup season and anytime you want a cozy dinner option.
