Dinner Idea - Hungarian Paprikás Krumpli

It's so simple and one of my favorites

1. fry some onions and peppers

2. add sausage, cook it a little

3. add potatoes

4. paprika, garlic, seasoning, salt

5. done in 20 minutes

serve with bread and sour cream

I made the potatoes separately because that's how my husband likes it, but you don't have to, it should all go in the same pot.

While my quick 20-minute version is perfect for busy weeknights, I wanted to share a bit more about why this sausage and potato stew holds such a special place in my heart and kitchen. This isn't just any potato stew; it's a traditional Hungarian dish, truly embodying the heart of Hungarian home cooking. 'Krumpli' means potato, and 'paprikás', well, that tells you it's all about the glorious paprika! It's a hearty, flavorful dish where potatoes and often sausage (or sometimes other meats) are simmered in a rich, vibrant paprika-infused sauce. The magic really happens when the sweet and smoky Hungarian paprika blends with the onions and garlic, creating that signature deep red color and incredible depth of flavor that makes it a true staple among Hungarian paprika recipes. For the best results, don't skimp on the paprika. Authentic Hungarian sweet paprika is key for that beautiful color and flavor. You can find different varieties, from sweet to hot, so choose what suits your taste. As for the sausage, I usually go for a smoked Hungarian sausage if I can find it, but any good quality smoked sausage or even kielbasa works wonderfully. Some traditional versions might even use bacon or other cuts of pork. And potatoes! Waxy potatoes like red bliss or Yukon Golds hold their shape well in a stew, but really, most firm potatoes will do. The image shows a hearty dinner with a rich red sauce, and that's exactly the kind of velvety, flavorful broth you want coating every piece. While my recipe is super quick, sometimes I let it simmer a bit longer, especially if I'm using tougher cuts of meat, to allow all those flavors to meld perfectly. A little trick I learned is to bloom your paprika in the fat after the onions and before adding liquid – this really brings out its aroma and color. Just be careful not to burn it! And remember how I mentioned my husband likes the potatoes cooked separately? This is a great tip if you prefer your potatoes firmer or want to avoid them getting too mushy in the stew. You could even roast them alongside for a lovely textural contrast, as the picture implies. Beyond just bread and a dollop of sour cream (which is classic!), Paprikás Krumpli is also wonderful with some pickled cucumbers or a simple green salad to cut through the richness. And for those looking for specific dietary options, this dish is naturally quite adaptable! Just ensure your sausage is gluten-free, and you can easily omit the sour cream or use a dairy-free alternative. It’s truly a comforting meal that feels special but is so wonderfully simple to make. Give it a try, and I bet this traditional sausage potato stew will become one of your family’s favorites too!
