🍯 Glazed 🥓-Wrapped 🐓 w/ Parm Roasted 🥦

Bacon-Wrapped Chicken Breast with Honey Glaze, Rice, and Parmesan Roasted Broccoli

Servings: 1-2

Total Time: ~50 minutes

Ingredients:

• Bacon: 5-6 slices

• Chicken breast: 1 serving (thawed)

• Salt and pepper: To taste

• Garlic powder: To taste

• Smoked paprika (optional): A pinch

• Lemon juice (optional): 1/2 teaspoon

• Honey: 2 tablespoons

• Shredded cheese (optional): 1/4 cup

• Garlic-herb butter (optional): 1 tablespoon

• Basmati rice: 1 cup (uncooked)

• Broccoli florets: 1 cup

• Olive oil: 1 tablespoon

• Chopped onion: 1/4 cup

• Minced garlic: 1 teaspoon

• Grated Parmesan cheese: 2 tablespoons

• Chicken bouillon cube: 1

Cookware Needed:

• Nonstick baking sheet

• Medium saucepan with lid

• Skillet (for pre-cooking bacon)

Instructions:

1. Preheat Oven:

Preheat the oven to 350°F.

2. Prep Chicken and Bacon:

1. Season the chicken breast with salt, pepper, garlic powder, and smoked paprika (if using). Add lemon juice if desired.

2. Partially cook the bacon in a skillet over medium heat until it begins to brown but is still pliable.

3. Wrap the chicken breast with the partially cooked bacon slices, overlapping slightly to cover the surface. Optionally, tuck shredded cheese or garlic-herb butter under the bacon for extra flavor.

3. Prep Broccoli:

1. Toss broccoli florets with olive oil, chopped onion, minced garlic, salt, and pepper.

2. Set aside.

4. Bake Chicken:

1. Place the bacon-wrapped chicken breast on one side of the baking sheet. Bake for 30-35 minutes, brushing with honey during the last 5 minutes.

5. Roast Broccoli:

1. Add the broccoli mixture to the baking sheet with the chicken. Optionally, cover the broccoli with foil for the first 15 minutes to prevent burning.

2. Roast for 20-25 minutes, stirring halfway through. Sprinkle Parmesan cheese over the broccoli during the last 5 minutes of roasting.

6. Broil to Finish:

1. After baking, switch the oven to broil. Broil the chicken and broccoli for 3-5 minutes to crisp the bacon and give the broccoli a golden finish.

7. Cook Rice:

1. Bring 1 1/2 cups of water to a boil in a medium saucepan.

2. Add the chicken bouillon cube and stir until dissolved.

3. Stir in 1 cup of rice, cover, and reduce heat to low. Simmer for 20 minutes.

4. Remove from heat and let sit, covered, for at least 5 minutes before fluffing with a fork.

8. Assemble and Serve:

1. Plate the honey-glazed bacon-wrapped chicken breast alongside the Parmesan roasted broccoli and rice.
