Ingredients
17 oz daikon radish
1c water
1/2c white sugar
1/2c white vinegar
1 tsp course sea salt
Directions
Cut radish into small cubes and put them into a sterilized glass jar.
Combine water, sugar, vinegar, and salt in a saucepan and bring them to boil over low to medium heat until the sugar dissolves. Stir often.
Pour the brine over the radish and close the lid. leave at room temperature for 3 to 4 hours then refrigerate. It should be ready to eat in 1 to 2 days.
Radishes can be refrigerated in an airtight container for a few weeks.
