Frozen Banana Ice Cream 🫶

For quite some time, I was not able to eat bananas or a lot of avocados because of latex allergies.

My body has decided that it will process the bananas and the avocados with no issues now. And I have to say, I am SO happy, and, I have been eating so many bananas and avocados lately. Lol

I have been experimenting with frozen banana slices and avocados and have come up with some really delicious recipe combinations.

For this recipe I used:

1 1/2 cups frozen banana slices

1/2 raw, ripe avocado

1 tablespoon natural peanut butter

1 tablespoon cacao or cocoa

1 square unsweetened chocolate

plant based milk - I used unsweetened coconut milk

I added all the ingredients to a small food processor. Added the milk, 1 tablespoon at a time and blended until smooth, thick and creamy.

I drizzled melted peanut butter over the top and sprinkled with a few pieces of the unsweetened chocolate. If you eat this right away, it is like a soft serve ice cream. Delicious! 😋
