Oatmeal Cookie Overnight Oats
2/3 cup of old fashioned oats, uncooked
1 teaspoon cinnamonÂ
1/8 cup raisins
1 cup of *unsweetened coconut milkÂ
3 * figs
1/2 teaspoon vanillaÂ
1 1/2 tablespoons * peanut butterÂ
Add the first 3 ingredients to a jar, mix thoroughly. I added the next 3 ingredients to a blender and mixed until smooth. Pour over oats, stir well. Add peanut butter and fold in a few times with a spoon. Refrigerate until morning, then enjoy!Â
* any unsweetened plant-based milk will work.
* you can substitute dates or 1 tablespoon honey or maple syrup for the figs.Â
* I used a natural creamy peanut butter. 100% peanuts and nothing else.  You can use any peanut butter. However, the flavor between the natural peanut butter and other types of peanut butter is soooo different when using in recipes. Especially the overnight oats.Â

Overnight oats are the ultimate convenience breakfast, combining nutrition, flavor, and quick preparation. This oatmeal cookie overnight oats recipe is not only delicious but also packed with wholesome ingredients that provide lasting energy throughout the day. Using old fashioned oats ensures a great texture that softens beautifully overnight without becoming mushy. The cinnamon adds subtle warmth and enhances the natural sweetness of the raisins and figs. The figs bring a unique fruity depth, but you can easily swap them with dates, honey, or maple syrup depending on your taste preferences or dietary needs. A standout ingredient here is natural creamy peanut butter, made from 100% peanuts, which enriches the oats with protein and healthy fats. This improves satiety, keeping you full longer and stabilizing blood sugar levels. When selecting peanut butter for recipes like these, opting for natural varieties without added sugar or oils guarantees a clean, authentic flavor. Unsweetened coconut milk rounds out the recipe by adding creaminess without the extra calories or sugars found in sweetened dairy or plant milks. However, you can replace it with any unsweetened plant-based milk such as almond or oat milk to fit your dietary restrictions or preferences. The method is simple but effective: mix the dry oats, cinnamon, and raisins first in a jar, blend the figs, coconut milk, and vanilla until smooth, then combine everything and fold in the peanut butter. Refrigerating overnight allows the oats to absorb the liquid and flavors, resulting in a creamy, cookie-inspired breakfast treat. Moreover, overnight oats are highly customizable. You can add nuts, seeds, or different fruits for texture variation. They’re perfect for meal prepping for busy mornings, providing a convenient, nutritious option you can grab on the go. Incorporating this recipe into your breakfast routine can contribute to improved digestion thanks to the fiber content in oats and fruits, support heart health, and boost your energy levels. Plus, it’s vegan-friendly and free from refined sugars if you choose natural sweeteners. Overall, these oatmeal cookie overnight oats combine convenience, health benefits, and indulgent flavor—a wonderful way to start your day energized and satisfied.
