Ingredients:

1 lb (450g) boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

2 tbsp olive oil (or vegetable oil)

1/4 cup soy sauce

1/4 cup bourbon whiskey

1/2 cup brown sugar

1/4 cup ketchup

2 tbsp apple cider vinegar (or white vinegar)

2 cloves garlic, minced

1 tsp grated ginger (optional)

1/2 tsp crushed red pepper flakes (optional, for heat)

1/4 cup water

2 tsp cornstarch (to thicken sauce)

Sliced green onions (for garnish)

Sesame seeds (optional, for garnish)

Cooked rice (for serving)

Instructions:

Cook the Chicken:

In a large skillet, heat the olive oil over medium-high heat.

Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Make the Sauce:

In the same skillet, add garlic and sauté until fragrant (about 30 seconds).

In a bowl, whisk together soy sauce, bourbon, brown sugar, ketchup, vinegar, ginger, and red pepper flakes. Pour the mixture into the skillet.

Bring to a boil, then reduce the heat to a simmer.

Thicken the Sauce:

In a small bowl, mix cornstarch and water until smooth. Slowly pour this mixture into the sauce while stirring to avoid lumps. Let the sauce simmer until it thickens, about 2-3 minutes.

Combine Chicken with Sauce:

Add the cooked chicken back into the skillet, stirring to coat the chicken evenly with the sauce. Simmer for another 5-7 minutes until the chicken is fully cooked and tender.

Serve:

Garnish with sliced green onions and sesame seeds if desired. Serve over cooked rice.

Enjoy your Bourbon Chicken with its sweet, tangy, and savory flavors!
