ใครกำลังหา “ขนมไหว้บรรพบุรุษ” ช่วงเชงเม้ง แล้วเจอคำว่า “ชูชังเปี๊ยะ/จูชังเปี๊ยะ” แต่ยังนึกภาพไม่ออกว่าคืออะไร ขอสรุปแบบเข้าใจง่ายจากที่เคยลองนะคะ ขนมชนิดนี้เป็นขนมไหว้เชงเม้งโดยเฉพาะ จุดเด่นคือไส้ที่ทำจากมันเทศนึ่งบดผสมน้ำตาล แล้วค่อยปรุงรส/เติมเครื่องตามสูตรของแต่ละร้าน ทำให้กลิ่นและรสจะต่างกันพอสมควร บางร้านจะเน้นหวานละมุน บางร้านจะหอมเครื่องแบบเค็มนิดๆ กินแล้วไม่เลี่ยน ส่วนตัวชอบสไตล์ที่ “หอมเครื่องปรุง” เพราะเปิดกล่องมาจะได้กลิ่นชัดมาก โดยเฉพาะแนวที่ใส่กุ้งแห้ง ผงพะโล้ พริกไทย และกระเทียมเจียว กลิ่นจะฟุ้งแบบขนมไหว้ที่จริงจัง เหมาะกับการจัดสำรับไปไหว้บรรพบุรุษมากๆ ตัวแป้งด้านนอกจะนุ่ม ไม่แห้งร่วน กัดแล้วละมุน ทำให้กินเพลินกว่าที่คิด ถ้าถามว่าไส้ไหนเหมาะกับใคร แนะนำแบบนี้ค่ะ - ไส้หมูหวาน + กุ้งแห้ง + ไข่เค็ม: จะออกเค็มหวานกลมกล่อม ได้ความหนึบของหมูหวานและความหอมของกุ้งแห้ง ด้านบนมักโรยงาขาว กินคู่ชาร้อนเข้ากันมาก - ไส้ทุเรียนหมอนทองกวน: เหมาะกับสายหวานและคนชอบกลิ่นทุเรียน ไส้จะนุ่มแน่น หอมชัด บางแบบจะใส่เม็ดมะม่วงหิมพานต์เพิ่มเท็กซ์เจอร์ หรือมีแบบโปะไข่เค็มใหญ่ให้เลือกด้วย เวลาเลือกซื้อ แนะนำดู “จำนวนชิ้นต่อกล่อง” ให้เหมาะกับจำนวนคนและจำนวนจุดไหว้ อย่างแบบ 1 กล่อง 16 ชิ้น ถือว่าหารง่าย จัดจานสวย และเหลือไว้กินต่อได้หลายวัน ทริคการเก็บให้ยังอร่อย: ถ้าเพิ่งได้รับของมาและยังไม่กินทันที ฉันจะเข้าตู้เย็นช่องธรรมดาไว้ก่อน พอจะกินค่อยเอาออกมาวางให้คลายเย็นสักพัก รสชาติและความนุ่มจะกลับมาดีมาก (บางคนชอบกินเย็นๆ ก็อร่อยไปอีกแบบ) ที่สำคัญคือควรปิดฝา/ใส่กล่องให้สนิทกันแป้งแห้งและกันกลิ่นอาหารอื่นในตู้เย็น สุดท้าย ถ้าต้องใช้ไหว้เชงเม้งจริงๆ แนะนำสั่งล่วงหน้าเผื่อเวลา จะได้เลือกไส้และขนาดไข่เค็ม (เล็ก/ใหญ่) ได้ตรงใจ และไม่ต้องรีบในช่วงใกล้เทศกาลค่ะ
