messy life messy taco
my food fixation lately has been veggie tacos. I know I know the pic is not esthetically pleasing but its a great representation of today. today was a little messy and it didn't go as planned and I ate dinner at 10 o clock standing at the kitchen counter no plate and still about 10 things on my to do list before my head hits the pillow. but damn this taco was good. so if you're looking to transition to a plant based diet here is a dinner idea for you mess and all recipe down below.
Ingredients: bell peppers, tomatoes, lettuce onions canned pinto beans, G.hughes sugar free yum yum sauce, salsa, and Greek yogurt or sour cream.
seasonings: taco seasoning,onion powder,garlic powder,salt, black pepper,kinders seasoning (the blend and buttery garlic &herb)
step 1: chop or slice peppers, onions and tomatoes. sautée peppers and onions for 3-5 minutes depending on your cruchy/soft preference) Add seasonings to your liking then slowly add water to create a sauce. set aside when done
step 2: Drain and rinse beans you can keep the water if you like. season with the same seasonings minus the taco seasoning. let cook for about 2 minutes then add yum yum sauce to get that sweet flavor. Add your sautéed veggies along with your chopped tomatoes, lettuce, sour cream and salsa.
