Tacos de pollo adobado
Hey everyone! If you're anything like me, you probably have a serious craving for authentic Mexican street food, and for me, pollo adobado tacos are at the very top of that list. I used to think making them at home would be super complicated, but after a lot of trial and error (and some amazing tips from abuela!), I've finally perfected a recipe that's both incredibly flavorful and totally doable in your own kitchen. What I love most about pollo adobado is that rich, smoky, slightly spicy marinade. It transforms ordinary chicken into something truly extraordinary. My secret? Letting the chicken soak up all those delicious flavors overnight. Seriously, don't rush this step! It makes all the difference in the world. Here's how I make my go-to pollo adobado tacos. First, for the marinade, I gather dried guajillo and ancho chiles (toasted and rehydrated, of course!), garlic, onion, apple cider vinegar, a touch of cumin, oregano, a pinch of cloves, and salt and pepper. I blend it all into a smooth paste. Then, I slice some boneless, skinless chicken thighs (they stay juicier than breasts, in my opinion!) into strips and really massage that gorgeous red marinade into every piece. Into the fridge it goes, ideally for 8-12 hours. When it's time to cook, I heat a little oil in a large skillet or cast-iron pan until it's nice and hot. I cook the chicken in batches to avoid overcrowding, getting a beautiful sear on each side. Once it's cooked through and slightly caramelized, I shred it roughly, or sometimes I just leave it in strips – depends on my mood! The smells filling my kitchen at this point are absolutely divine. Now for the assembly! I warm up some corn tortillas on a comal or dry skillet until they're soft and pliable. A double stack of tortillas is key for holding all that deliciousness without breaking. Then, it's a generous spoonful of the seasoned pollo adobado, and my favorite toppings: finely diced white onion, a sprinkle of fresh cilantro, a squeeze of lime juice, and a dash of my homemade salsa verde. Sometimes I add a little avocado crema for extra richness. Each bite is a burst of flavor – savory, tangy, and just the right amount of kick. These tacos are perfect for a casual weeknight dinner or even a fun gathering with friends. They're always a hit! Don't be intimidated by making your own marinade; it's simpler than it sounds and so much more rewarding than anything store-bought. Give my recipe a try, and I guarantee you'll be making pollo adobado tacos your new favorite too!
