🍽️ Herb Chicken & Garlic Butter Jasmine Rice

🌿 INGREDIENTS

1 lb (450 g) boneless chicken thighs, sliced into thin strips

1 tbsp olive oil

2 garlic cloves, minced

1 tsp salt

1 tsp black pepper

1 tsp paprika

1 tsp ground caraway

1 tbsp fresh chopped parsley

1 tbsp fresh chopped dill

1 tbsp fresh chopped thyme

1 tbsp butter (added at the end)

🍚 Garlic Butter Jasmine Rice

1 cup jasmine rice

1¼ cup chicken broth

Small piece of butter

1 clove garlic, minced

INSTRUCTIONS

1️⃣ Prepare the Chicken

Add chicken strips to a bowl.

Add olive oil, minced garlic, salt, pepper, paprika, and ground caraway

Add parsley, dill, and thyme.

Mix everything well and marinate for 10 minutes in the fridge.

2️⃣ Cook the Chicken

Heat a pan on medium–high.

Add the chicken with all the marinade.

Spread it in one even layer.

Cover with lid and cook 5–6 minutes.

Remove lid, lower heat to medium–low, and sauté 3–4 minutes until lightly golden.

Add 1 tbsp butter at the end and let it melt into the chicken.

3️⃣ Make the Garlic Butter Jasmine Rice

Wash the rice until the water runs clear.

In a pot, melt a small piece of butter.

Add minced garlic and sauté for a few seconds (don’t let it brown).

Add the washed rice and stir to coat it in the garlic butter.

Add 1¼ cup chicken broth.

When it starts to boil, cover with a lid.

Lower the heat to the lowest setting and cook 17 minutes.

Turn off the heat and keep covered for 10 minutes.

Uncover and fluff with a fork.
