Homemade Spaghetti Pasta
🍝 Fresh Spaghetti From Scratch — Golden & Silky Homemade Perfection 🍝
There’s nothing like the moment fresh pasta falls in soft golden ribbons across your counter.
This was made with love — six eggs, a mix of semolina and all-purpose flour, and pure patience.
The flavor? Buttery, rich, and unbelievably smooth. Once you make pasta like this, boxed noodles will never compare. 💛
⸻
🥚 Ingredients
• 2 cups all-purpose flour
• 1 cup semolina flour
• 6 large eggs
• 1 tablespoon olive oil
• ½ teaspoon salt
(Optional: a few drops of water if dough feels too dry)
⸻
👩🍳 Instructions
1. Mix the flours & salt on a clean surface. Make a well in the center and add your eggs and olive oil.
2. Slowly bring it together with a fork, then knead by hand until the dough is smooth and elastic — about 10 minutes.
3. Wrap and rest for 30–45 minutes at room temperature.
4. Roll the dough through your pasta machine, starting on the widest setting. Fold and pass through a few times until smooth, then work down to setting 5 for spaghetti.
5. Cut into noodles and dust with semolina or flour to keep strands separate.
6. Boil in salted water for 2–3 minutes — fresh pasta cooks fast!

🍅 Serving Idea
We paired ours with homemade meatballs simmered in garlic-tomato sauce.
Simple, cozy, and absolutely restaurant-level.
⸻
💡 Tips
• Let the dough rest before rolling — it makes it softer and easier to work with.
• Lightly dust with semolina between layers to prevent sticking.
• You can hang or nest noodles to dry for a few hours before cooking or freezing.

Making fresh homemade spaghetti is a rewarding process that transforms simple ingredients into a comforting meal. Utilizing a mix of semolina and all-purpose flour not only contributes to the dough’s elasticity but also creates that desirable golden hue and silky texture that boxed pastas can't match. Semolina flour, derived from durum wheat, is coarser and high in protein, which gives pasta its firm bite and helps it maintain shape during cooking. Adding six large eggs enriches the dough, providing extra moisture and a buttery flavor that enhances the overall taste. An important step in achieving the perfect dough is allowing it to rest for 30 to 45 minutes at room temperature. This resting period hydrates the flour fully and relaxes the gluten, making the dough smoother and much easier to roll out. Rolling the dough through progressively thinner settings on a pasta machine ensures an even and thin pasta sheet without tearing. Lightly dusting with semolina or flour during rolling and cutting prevents the strands from sticking together. Fresh spaghetti cooks remarkably fast, usually in just 2 to 3 minutes when boiled in well-salted water. Overcooking fresh pasta can result in a mushy texture, so keep a close eye while boiling. For storage, fresh pasta can be hung or gently nested on trays to dry slightly and then frozen for future use, retaining its fresh taste and texture. Serving fresh spaghetti with a rich garlic-tomato sauce and homemade meatballs elevates this dish to restaurant-quality comfort food. Adding fresh herbs such as basil or parsley, a drizzle of extra virgin olive oil, and freshly grated Parmesan cheese enhances the flavors further. The phrase "Enjoy your meals" captured in the image adds a warm, inviting touch, echoing the sentiment that cooking pasta from scratch is a fulfilling experience bringing joy both in preparation and eating. Homemade pasta making is more than cooking; it’s a therapeutic ritual that fills your kitchen with the aroma of tradition and love, leaving you with a sense of accomplishment and a happy heart.
