30-mins claypot chicken rice (with rice cooker!)

Easy peasy 30-mins claypot chicken rice (with rice cooker!)

No claypot? No worries. Just use rice cooker and it works well too! Simply add all the ingredients to the rice cooker. To make the rice more claypot-like and crispy, simply cook for a longer period of time. 30 mins works for us but you can definitely try 45 mins for crispier rice.

As for the rice itself, we recently switched to SōngHè Plus Enriched Fragrant Rice which contain enriched rice grains containing dietary fibre, iron, zinc and folate (Vitamin B9). Same fragrant taste and texture as regular rice - but with all the additional nutrients 💯 Just rinse and cook the rice the same way as regular rice!

Read moreIf you've ever hesitated to try making claypot chicken rice at home, using a rice cooker, especially a reliable brand like Cadware, really simplifies the process and ensures consistent results. What I appreciate about the rice cooker method is that it gives you control over the cooking time — extending it to 45 minutes creates that prized crispy bottom layer of rice, reminiscent of traditional claypot cooking. I highly recommend trying SongHe Plus Enriched Fragrant Rice featured in this recipe. It contains added dietary fiber, iron, zinc, and folate (Vitamin B9), so you get extra nutrition without sacrificing flavor or texture. From my experience, rinsing and cooking it just like regular rice works perfectly for this dish. For best flavor, use fresh shiitake mushrooms and quality condiments such as oyster sauce and dark soy sauce to achieve a rich, umami-packed taste. Adjusting the seasoning with sesame oil and white pepper rounds out the dish beautifully. Garnishing with chopped spring onions not only adds a fresh aroma but also a pop of color. Finally, don't worry if you don't have a traditional claypot — the rice cooker method is a fantastic and fuss-free alternative that still delivers an authentic, comforting meal. Give it a try, and you might find yourself making this quick, wholesome claypot chicken rice regularly!
