Vegan fajitas- one pan

Learn how to cook veggies in the air fryer for a tender, slightly charred texture that enhances their natural sweetness.

Ingredients

▢3 Bell Peppers, seeded and cut lengthwise into 1/2-inch slices; I used one each of red, yellow, and green bell peppers.

▢1 Red onion, peeled and cut lengthwise into 1/2-inch slices

▢1 1/2 tablespoons Extra virgin olive oil

▢1 teaspoon Kosher Salt

▢1/2 teaspoon Garlic powder

▢1 teaspoon Cumin Powder

▢1 teaspoon Paprika

▢1/4 teaspoon Black Pepper, freshly crushed

▢1/2 teaspoon Oregano

▢1/2 Lime, juiced

▢Cilantro leaves, for garnish

Instructions

- Preheat the air fryer to 380°F.

- Add the pepper and onion slices to a large bowl and add the oil, salt, garlic, cumin, paprika, black pepper and oregano. Toss until well combined.

- Place the peppers and onions in the air fryer basket in a single layer as much as possible and air fry at 380°F for 9-11 minutes or until fork tender and beginning to char.

- Remove the basket at the mid-way point and shake or stir the peppers and onions to ensure they cook evenly.

- Add a sprinkle of lime juice. You can also garnish with some cilantro leaves. Serve immediately.
