✨ Grilled Deodeok (더덕구이 / Deodeokgui) Recipe✨
Ingredients:
• Deodeok (더덕)
• Soy sauce
• Sesame oil
• Green onion
• Garlic
• Gochujang (Korean red Chilli paste)
• Gochugaru (Korean red chili powder 고추가루)
• Fish sauce
How to Make It:
1. Split the deodeok open so they lay flat (rip by hand or cut + lightly smash).
2. Squeeze out the water — save that water for the sauce!
3. Coat the deodeok with soy sauce, then add a little sesame oil and mix well.
4. Cook on low heat with a bit of oil, flattening them onto the pan. Lightly char both sides.
5. Combine the saved deodeok water with chopped green onion, garlic, gochujang, gochugaru, soy sauce, sesame oil, and fish sauce.
6. Spread the sauce over the deodeok and cook on low until the sauce is fully absorbed.
7. Don’t rush it — low and slow so it doesn’t burn.
Serve with hot rice and your favorite banchan 🤍🍚🇰🇷

Grilled Deodeok, known as 더덕구이 (Deodeokgui) in Korean cuisine, is a uniquely flavorful side dish cherished for both its taste and health benefits. Deodeok root has a slightly bitter yet refreshing flavor that pairs beautifully with spicy and savory seasonings. This dish is often enjoyed as a banchan (Korean side dish) alongside a meal of hot steamed rice and other complementary dishes. The key to mastering Grilled Deodeok is the careful preparation and cooking technique. Splitting and lightly smashing the deodeok allows the sauce to penetrate deeply, while squeezing out the water preserves its nutrients and adds moisture to the marinade. The sauce blends traditional Korean flavors by combining gochujang (fermented chili paste), gochugaru (chili powder), garlic, green onions, soy sauce, sesame oil, and fish sauce. These ingredients contribute layers of umami, heat, and aromatic richness. Low and slow cooking helps caramelize the sugars in the sauce without burning, maximizing flavor and maintaining the tender texture of the root. Deodeok is celebrated for its potential health benefits, including promoting respiratory health and providing antioxidants. Including this dish in your Korean cooking repertoire offers a unique way to enjoy authentic Korean flavors and nourish your body simultaneously. To elevate your meal, serve Grilled Deodeok alongside an assortment of banchan such as kimchi, pickled vegetables, or seasoned spinach. This creates a well-rounded eating experience that is visually colorful and culturally authentic. Whether you are a Korean food enthusiast or a curious cook, this recipe delivers a genuine taste of Korean traditional cuisine that’s both simple and satisfying.
