🌿 Vegan Kimchi Jjigae (Korean Kimchi Stew)

Ingredients:
• 1 tbsp sesame oil
• 1 small onion, sliced
• 2 cloves garlic, minced
• 1 cup well-fermented vegan kimchi (plus a little kimchi juice)
• 1–2 tbsp gochujang (Korean red chili paste)
• 1 tsp gochugaru (Korean chili flakes, optional for extra spice)
• 1 tbsp soy sauce or tamari
• 1 tsp sugar or maple syrup (to balance acidity)
• 2 ½ cups vegetable broth or water
• ½ block firm tofu, cubed
• ½ cup mushrooms (shiitake, oyster, or cremini work great)
• 1 green onion, chopped (for garnish)

Instructions:
1. Sauté the aromatics:
Heat sesame oil in a pot over medium heat. Add onion and garlic, and cook until fragrant (about 2–3 minutes).
2. Add the kimchi:
Stir in the kimchi and let it cook for about 3–5 minutes to deepen the flavor.
3. Season the base:
Mix in gochujang, gochugaru, soy sauce, and sugar. Stir until everything is well combined.
4. Add broth & simmer:
Pour in the vegetable broth (and kimchi juice if you have it). Bring to a boil, then lower the heat and let it simmer for 10–15 minutes.
5. Add tofu & mushrooms:
Gently stir in tofu cubes and mushrooms. Simmer another 5 minutes.
6. Finish & serve:
Taste and adjust seasoning — add a splash more soy sauce or gochugaru if you like it saltier or spicier.
Garnish with green onions and serve hot with steamed rice 🍚
