Chickpea “Tuna” Salad
A high-protein vegan tuna alternative with that classic deli-style flavor and a subtle ocean taste from nori.
Ingredients
* 1 can chickpeas, drained and rinsed
* 2–3 tbsp vegan mayo
* 1 tsp Dijon mustard
* 1–2 tbsp sweet relish
* 2–3 tbsp red onion
* 1 sheet nori seaweed, torn into pieces
* 1 tsp dried dill herb
* ½ tsp onion powder
* ½ tsp garlic powder
* ¼ tsp smoked paprika
* A pinch of Old Bay seasoning
* Sea salt, to taste
* Black pepper, to taste
Instructions
1. Add the chickpeas, red onion, and torn nori to a food processor. Pulse a few times until flaky and slightly chunky.
2. Add the vegan mayo, Dijon mustard, sweet relish, dill, onion powder, garlic powder, smoked paprika, Old Bay, sea salt, and black pepper.
3. Pulse again until creamy but still textured — don’t overblend unless you want it super smooth.
4. Taste and adjust seasoning as needed.
5. Chill for 10–15 minutes so the flavors can meld together.
Salad consists of: Spring mix lettuce, romaine lettuce, banana peppers, Kalamata olives, red onions, tomatoes, cucumbers w/ Italian dressing! 🥗
