• Salt to taste

• Juice of half a lemon

• For the vegetables:

• 1 cup broccoli florets

• 1 cup cauliflower florets

• 1/2 red bell pepper, sliced

• 1/2 yellow bell pepper, sliced

• 2 tbsp olive oil

• 2 cloves garlic, minced

• 1 tsp soy sauce (optional for flavor)

• A pinch of red chili flakes (optional)

Instructions:

1. Prepare the salmon:

• In a bowl, mix the olive oil, garlic powder, smoked paprika, black pepper, salt, and lemon juice.

• Coat the salmon chunks with this marinade and set aside for 15 minutes.

2. Cook the salmon:

• Add the broccoli, cauliflower, and bell peppers. Stir-fry on medium-high heat for 5-7 minutes or until the vegetables are tender-crisp.

• Drizzle with soy sauce and sprinkle red chili flakes if desired.

4. Combine and serve:

... Read moreI absolutely love a good stir-fry, and this salmon and vegetable version has quickly become one of my go-to recipes! It's not just delicious, it’s incredibly versatile and perfect for those nights when you want something healthy without spending ages in the kitchen. If you're like me and always looking for ways to jazz up your weeknight dinners, you’re in for a treat with this recipe. It truly is a perfect combo! One of the best things about stir-fries is how adaptable they are. While the recipe calls for broccoli, cauliflower, and bell peppers, don't be afraid to experiment with other veggies you have on hand or what's in season. I often throw in snap peas, sliced carrots, mushrooms, or even some baby bok choy. Just make sure to cut them into similar sizes so they cook evenly. For an extra kick, a dash of ginger or a sprinkle of sesame seeds at the end can elevate the flavors even more. And if you're out of soy sauce, coconut aminos work wonders too! To get that restaurant-quality stir-fry, here are a few tips I've learned along the way. First, don't overcrowd your pan. If you put too many ingredients in at once, they'll steam instead of sear, and you won't get that lovely tender-crisp texture. Cook your veggies in batches if needed. Second, make sure your pan is nice and hot before adding your vegetables—this is key for achieving that beautiful char. For the salmon, remember that it cooks quite quickly, so keep an eye on it to prevent overcooking; you want it flaky and moist, not dry. This ensures your salmon/veggies dish is always on point! Beyond just serving it with rice or noodles, try pairing this salmon and vegetable stir-fry with quinoa for extra protein, or even cauliflower rice if you're looking for a lower-carb option. Sometimes I even wrap it in large lettuce leaves for a light and refreshing meal. It's also fantastic for meal prep! I often make a bigger batch and divide it into containers for lunches throughout the week. Just store the salmon and veggies separately and combine when reheating to maintain the best texture. Trust me, this healthy and easy salmon and veggie stir-fry will be a new favorite in your rotation!
