Dubai Chocolate Covered Strawberries 🍓🍫

Since my fiancé and I have been focusing on eating better this year, I didn’t want to go overboard for Valentine’s Day. This felt like the perfect middle ground - it’s something sweet, simple, and still made with wholesome ingredients!

INGREDIENTS:

- Fresh strawberries, washed and fully dried

- Kataifi (shredded phyllo dough) about 2 cups tightly packed

- 2 tbsp butter

- 1¼ cups pistachio butter (recipe below ⬇️)

- 3 tbsp tahini (optional)

- Milk chocolate for dipping

(I used Lindt milk chocolate bars, but almond bark or melting wafers work too)

DIRECTIONS:

1. Melt butter in a pan over medium heat. Add the kataifi and cook, stirring constantly, until golden brown and crisp. Remove from heat and cool for 5 minutes.

2. Add the toasted kataifi to a bowl. Mix in the pistachio butter and tahini until fully combined.

3. Transfer the mixture to a parchment-lined baking sheet and press firmly into an even layer and place in the freezer until firm.

- This step is not optional

- Freezing gives the mixture structure so it can be molded and will actually stick to the strawberries.

4. Once slightly firm, take the mixture and tightly press it onto each strawberry.

- Press firmly - this takes a little time, but it will stick.

5. Place the filled strawberries back into the freezer while you melt the chocolate.

6. Melt your chocolate, then dip each frozen strawberry to fully coat.

7. Drizzle, decorate, or add any toppings you may like. Let it set, then enjoy!!

HOMEMADE PISTACHIO BUTTER

INGREDIENTS:

- 2 cups raw unsalted pistachios

- ½ tsp salt

- ½ cup powdered sugar

- Up to ½ cup coconut oil, added gradually

DIRECTIONS:

- Add pistachios to a food processor and blend until finely ground.

- Scrape down the sides.

- Add powdered sugar and salt.

- With the processor running, slowly add coconut oil until the mixture reaches your desired thickness and creaminess.

For us, it’s been less about going all out and more about enjoying something small together. Do you prefer homemade desserts or going out for something sweet on Valentine’s?

The combination of crispy kataifi, creamy pistachio butter, and rich milk chocolate creates a delightful contrast of textures and flavors that elevate a classic treat. One tip I found helpful is to ensure the strawberries are completely dry before you start. Any moisture can prevent the kataifi mixture from sticking properly. Freezing the mixture before pressing it onto the strawberries is crucial—it gives the filling structure so it holds firm without sliding off when dipped in chocolate. The homemade pistachio butter adds a luxurious nutty flavor that pairs beautifully with the sweetness of the fruit and chocolate. Making your own nut butter at home is surprisingly easy and lets you control the sweetness and texture. Adding a bit of tahini not only enhances the creaminess but also introduces subtle earthy undertones, making this version stand out from typical chocolate strawberries. For the chocolate coating, while milk chocolate is classic and smooth, experimenting with dark chocolate or even white chocolate can offer exciting variations. You might also add toppings like crushed pistachios, edible gold flakes, or a drizzle of caramel to elevate the presentation. This recipe is perfect for special occasions like Valentine’s Day, anniversaries, or any time you want a manageable portion of something indulgent but still made with wholesome ingredients. It’s less about overindulging and more about savoring a thoughtful, home-prepared sweet treat. If you’re health-conscious but still crave dessert, this recipe strikes an excellent balance. Give it a try and you might find that homemade desserts not only taste better but also feel more rewarding to make and share. Plus, you can customize the ingredients to suit your preferences and dietary needs. Enjoy the process and the delicious results!
