Parmy Garlic Shrimp & Spinach
This easy dinner is light on the stomach, but packs so much flavor - and no chopping required! You can eat this as is or over a bed of rice, pasta, etc. It comes together in about 20 minutes, so it’s perfect for the weeknights too. Here’s the recipe:
Ingredients:
- 1.5lbs peel & deveined shrimp
- 10oz fresh baby spinach
- 2 Tbsp salted butter
- 1 Tbsp olive oil
- 2 Tbsp of dehydrated minced garlic (you can find this in the spice aisle!)
- 3 Tbsp of grated parm + extra for topping
- 1 tsp soy sauce or soy sauce alternative
- 1 tsp red wine vinegar
- 1 tsp honey
- 1 tsp garlic powder
- 1 tsp onion salt
- 1/4 tsp cayenne powder
Parmy Garlic Shrimp & Spinach
Directions:
1. Pat shrimp completely dry on both sides. Drizzle with olive oil and season with garlic powder, onion salt, & cayenne powder. Mix until everything is fully combined and shrimp are evenly coated. Set aside.
2. In a small bowl, combine dehydrated minced garlic with 2 Tbsps of water. Mix & set aside.
3. Spray a large nonstick skillet with cooking spray and sear shrimp in a single layer over medium-high heat, 1 minute per side. Remove shrimp from the skillet and set aside.
4. Lower heat to medium and melt butter into the skillet, using it to scrape up the brown bits left from the shrimp. Drop in rehydrated garlic, mixing it into the melted butter.
5. Wilt spinach, one handful at a time, incorporating it into the butter & garlic mixture, until all the spinach is gone.
6. Once spinach is almost fully wilted, put shrimp back into the skillet. Mix in 3 Tbsps of grated parm, honey, soy, & red wine vinegar. Stir until fully incorporated.
7. Enjoy as is or serve on your favorite base! I love to serve it over rice and top with fresh minced parsley and a little more parm!
