ALIX EARLE CHICKPEA BLONDIES

omg so yummy and healthy!

Ingredients

- 1 can of chickpeas

- 1/3 cup cashew butter

- 1/2 cup maple syrup

- 2 tsp vanilla

- 1/2 tsp backing soda

- 1/2 tsp baking powder

- Pinch of sea salt

- 1/3 cup almond flour

- 1/3 cup of chocolate chucks

How to bake:

*preheat oven to 350 and grease 9x9 pan

*wash chickpeas and pat dry with paper towel. You want to try and get out as much moisture as possible.

*place chickpeas in blender, add in nut butter maple syrup, vanilla, baking soda, baking powder, and salt. Blend until smooth

*add in almond flour and blend until smooth

*add in your chocolate chunks and mix (do not blend)

*place in greased pan and I like to add a few extra chocolate chips on top

*bake for 25-30 mins or until golden brown. Let cool for 10 mins (this is important as they are fragile and will break)

ENJOY!!🤍

... Read moreAlright, fellow healthy treat seekers! If you've been scrolling through social media and seen Alix Earle's famous chickpea blondies, you’re probably wondering if they live up to the hype. Let me tell you, they absolutely do! I was skeptical at first – chickpeas in a dessert? But after trying this recipe, I'm a total convert. They're surprisingly delicious, incredibly healthy, and hit that sweet spot without any guilt. One of the most crucial steps, which might seem simple but makes a big difference, is washing and drying your chickpeas. You might see people just draining them, but trust me, giving them a good rinse under running water in a colander (just like the picture shows!) is key. This gets rid of that starchy, sometimes metallic-tasting liquid from the can. After rinsing, don't skip the step of patting them thoroughly dry with a paper towel. Excess moisture can make your blondies cakey or even a bit gummy, so you want them as dry as possible. Some people even go the extra mile to remove the chickpea skins for an ultra-smooth texture, but honestly, a good blend often does the trick without that extra fuss! When it comes to blending, patience is a virtue. Start with the wet ingredients and chickpeas, blending until you get a super smooth, creamy base. The OCR images show this progression perfectly, from whole chickpeas to a smooth mixture. Make sure there are no lumps! Then, add the almond flour and blend just until combined. The trick here is to avoid over-mixing, especially once the flour is in. And for the grand finale – the chocolate chips! Fold them in gently. We want those delicious chunks, not a chocolate-colored batter, right? I always add a few extra on top before baking, just like the recipe suggests, because who can resist extra melted chocolate? Now, if you're like me and love to experiment, these blondies are super adaptable. While this recipe keeps them wonderfully healthy, you could play around with different nut butters – almond butter works great too! For a slightly different twist, you can add a pinch of cinnamon or even some orange zest for a "Mariela blondie" inspired flavor profile, if you're looking for variations beyond the classic. Baking them until golden brown is important, but don't overbake! They might seem a little soft when they come out, but trust the process. The most important tip? Let them cool for at least 10-15 minutes in the pan. They firm up beautifully as they cool, preventing them from crumbling when you cut into them. I learned this the hard way on my first batch! These blondies are perfect for meal prep too. Store them in an airtight container at room temperature for a few days, or pop them in the fridge for a week. They even freeze well! So next time you're craving a sweet treat but want to keep it on the healthier side, give these Alix Earle chickpea blondies a try. You'll be amazed at how good they are!
