Blueberry Streusel Muffins 🫐
I made these the other day. And they were so moist and delicious! 😍. Quick and easy to make with a few simple ingredients.
Muffin Ingredients:
▢ Betty Crocker Blueberry Muffin Mix Pack
▢ 2 tbsps AP Flour
▢ 1/2 Cup Milk
▢ 1 Tbsp Lemon Extract
▢ 1/4 cup Crisco Shortening
Streusel Ingredients:
▢ ½ cup all-purpose flour
▢ ½ cup granulated sugar
▢ 4-6 tbsps unsalted butter, melted
▢ ½ teaspoon ground cinnamon
Glaze Icing:
▢ Milk
▢ Powdered Sugar
Streusel Instructions:
1. In a medium bowl, combine the flour, sugar and cinnamon. Slowly drizzle the butter into the bowl while stirring the crumbs with a fork. You can start with 3-4 tbsps and add more as needed until the crumbs form. Do not over mix! (you do not want this to become like a dough).
2. Then, store in the refrigerator until ready to use.
Muffin Mix Instructions:
1. Heat oven to 400°F (or 375°F for nonstick pan). Place paper baking cups in 6 regular-size muffin cups (for best results), or grease bottoms only of muffin cups.
2. Add muffin mix, flour, milk, lemon extract and Crisco shortening and mix together until well blended. Scoop about 2/3 batter into each cup. Then, top off with the streusel.
3. Bake 17 to 22 minutes or until light golden brown. Cool 5 minutes. Carefully remove from pan. Transfer them to cooling rack. If muffins are not in paper baking cups, run knife around sides before removing.
Make the glaze icing. If you want a light, thinner icing then use less powdered sugar. If you want a thicker icing, then use less milk. Then, drizzle over each muffin.
