Every single batch of dough we make is mixed fresh from scratch and on days like these, we’re constantly checking temperatures to keep the dough under 71°F. If it gets too warm, the yeast starts working way too fast, the dough over-ferments and suddenly our entire day’s production can get thrown off. 😅 We spend a lot of time prepping fresh dough every week, over 400 pounds! & then every batch has to ferment for 48 hours. A lot of love put into making sure it comes out just right! 🫶🏻

From personal experience working in busy pizzerias during warm months, I've found that controlling both temperature and humidity is essential to keep dough quality consistent. When the dough gets too warm—especially above 71°F—the yeast metabolizes sugars too quickly, causing the dough to ferment much faster than intended. This can lead to overly bubbly or sour dough that negatively affects the texture and flavor of the final pizza. In humid conditions, moisture in the air not only speeds up fermentation but can also alter dough hydration. This means the dough might feel stickier or softer than usual, requiring adjustments in flour amounts or mixing methods. To counter this, we monitor room temperature closely and sometimes use air conditioning or cool water in the mixing process to keep dough temperatures in check. Another key part of managing dough quality despite humidity is patience. Extended fermentation times, such as the 48-hour cold fermentation we use, allow flavors to develop while preventing over-proofing. This slow fermentation also improves dough elasticity and crust crispness. If you're trying pizza dough at home during a heatwave or high humidity, try mixing your dough in a cooler space and watch the dough's rise to avoid over-fermentation. Even small changes, like reducing yeast slightly or refrigerating your dough longer, can make a big difference.
