EASY LOADED POTATOES RECIPE

Just two more days till the end of 2025 and I still haven’t finished my New Year’s resolutions… but at least these potatoes are fully loaded and delicious 😋

INGREDIENTS

- 3 Russet potatoes

- ¼ cup cooking cream

- 3 tbs Sour cream

- 2 tbs Butter

- bunch Green onions sliced

- 1.5 cups Cheddar cheese - grated

- 5 strips Bacon

- 2 tsp Salt

- 1 tsp Black pepper

- 2 tbs olive oil

DIRECTIONS

1. Preheat your oven at 200°C

2. Rinse your potatoes and carefully with a fork, poke holes into your potatoes

3. Drizzle olive oil and generously coat your potatoes with it. Then, sprinkle salt on it. Bake your potatoes for about 1hr depending on the size of your potatoes.

4. While waiting for your potatoes to bake, cook your bacon on a pan. If you’re using turkey bacon, you will need 2tbs oil. If you’re using pork, you won’t need oil. Once cooked, cut it into small pieces. Set it aside

5. Once your potatoes are cooked, allow it to cool for about 5 mins before scooping the potatoes out

6. In a small bowl, mix together your cream, sour cream, butter, salt and black pepper. Then add your scooped potatoes, cheese, chopped green onions and bacon bits. Mix everything together then place it back into your potato skins.

7. Top it off with more cheese and bake it for another 10-15 mins. Once done, top it off with 1 tbs of sour cream and bacon bits for garnish. Enjoy!
