INGREDIENTS
- 70 g kataifi
- 30 g unsalted butter
- 180 g pistachio cream
Chewy Marshmallow Cookie Dough
- 330 g marshmallows
- 75 g unsalted butter
- 37 g cocoa powder
For Shaping
- Neutral vegetable oil (on your hands)
- Extra cocoa powder (for coating)
DIRECTIONS
1. Melt 30 g butter over low heat. Add the kataifi and gently toast until lightly golden and fragrant
2. Then, remove from heat and mix in the pistachio cream until well combined. Let it chill for 10 minutes until firm.
3. While waiting, melt 75 g butter over low heat and then add the marshmallows and stir constantly until about 85% melted. Add cocoa powder, then mix quickly until just combined.
4. Lightly grease your hands with oil or melted butter. Shape the dough, add the pistachio filling, and form into cookies.
5. Roll each cookie in cocoa powder before serving.
