High Protein Chicken Taquitos
INGREDIENTS:
- 500g chicken breast
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp pepper
- 1 tsp salt
- 1/2 tsp oil
- 100g light cream cheese
- 1 packet taco seasoning
- 60 - 80ml water
- 240g grated mozzarella
DIRECTIONS:
1. Prep your chicken by seasoning it with salt, pepper, paprika, garlic powder and onion powder on both sides
2. In a pan, add some oil (just a little bit) and cook your chicken on medium heat for 10 - 12 mins. Once that is cooked, take it out and shred it. Once shredded, place it back into the pan and add water, cream cheese and taco seasoning. Cook until there’s no more liquid left and then set it aside.
3. Take a piece of wrap and add some mozzarella cheese, followed by your chicken. Roll it up from bottom (half way) then the sides and then roll it up again to the top
4. Toast it with just a little bit of oil and it’s ready to eat!
5. If you’re planning to have it some other time, wrap it in a foil and store in the freezer. To reheat, remove the foil and microwave it for 1 - 2 mins before toasting or airfrying it for it to be crispy
