Some people rush this step, but trust me, it's worth the extra few minutes of stirring over medium heat to get that nutty aroma and color just right. It truly is the foundation of the dish. Now, let's talk about some star ingredients in this Vegan Gumbo. I love using hearts of palm for that wonderful texture that surprisingly mimics seafood in stews. If you can't find them, artichoke hearts can be a good substitute. And those vegan sausages? They add so much savory depth and chewiness.
