Homemade Pho
This is my second making Pho and I feel like I did a good job. So the broth is beef based broth. I added to my bowl noodles, fresh onion, enoki mushrooms, vegetable dumplings, rolled beef and marinated eggs. I also had some cloudy pineapple sake to drink as well. My meal was a 10/10 the only thing I was missing was some fresh jalapeño peppers. This meal does not even take over 30 mins to make. And be careful with the rolled beef because it takes not even a minute to cook.
It's so rewarding when a homemade meal turns out absolutely perfect, especially something like pho! I totally get that feeling of accomplishment after seeing those beautiful, tender beef slices floating in a rich broth. My last batch really hit the spot, and ever since, I’ve been experimenting to make it even easier and more visually appealing for that perfect ‘close up’ shot we all love to share. Getting those ideal beef slices for pho is key, and it’s actually simpler than you think! I've found that using a good cut like eye of round or sirloin makes a huge difference. The trick is to partially freeze the beef for about 30-40 minutes before slicing. This firms it up just enough so you can get paper-thin, almost translucent slices. Always slice against the grain – this ensures maximum tenderness when cooked. That 'rolled beef' look I achieved? It comes naturally when your slices are thin enough and you arrange them carefully in the bowl just before pouring over the hot broth. The heat from the broth gently cooks them to perfection in mere seconds, leaving them wonderfully tender. You really do have to be quick, just like I mentioned – not even a minute! Beyond the beef, the other elements truly elevate the experience. For instance, those fresh enoki mushrooms I used add a lovely, delicate texture that contrasts beautifully with the noodles and beef. And while not traditional, adding vegetable dumplings was a personal touch that made the meal even more satisfying and hearty. Don't forget the marinated eggs! They're surprisingly easy to make ahead and add a rich, savory depth to each spoonful. These little additions, along with the fresh onions, really make the bowl pop, both in flavor and for those 'healthy habits' we're all striving for. I also love rounding out my pho experience with a few extras. Sometimes I’ll have a side of crisp kimchi – the tanginess is a fantastic counterpoint to the savory broth. And for a sweet treat, a small bag of muscat gummy candy (like the ones in my photo!) is a fun, unexpected way to finish. Making pho quickly, especially in under 30 minutes, depends heavily on your prep. Having a good quality broth ready (whether store-bought or a batch you've frozen) and all your ingredients prepped and laid out – what chefs call 'mise en place' – makes the assembly a breeze. It truly transforms a potentially long cooking process into a super speedy, gourmet meal. It’s amazing how a few simple techniques can turn a weeknight meal into a restaurant-quality experience. If you’re like me and love a delicious, hearty meal that doesn’t take hours, give this quick pho method a try. You’ll be so proud of your perfectly arranged, tender beef slices and the rich, flavorful broth. It’s definitely a dish that makes you feel like a pro chef, even on your second try!
