Started off w/ some achiote oil, crushed garlic, onions, and peppers. Cooked it until onions were translucent. Added celery, tomatoes, tomato sauce, sofrito, and chicken stock. Cooked until tomatoes were easy to smash. Added chicken stock and seasonings to broth until reach desired flavors. Add in carrots, potatoes, pumpkin, and corn; bring to a boil. Add in chicken thighs and soup noodles. Simmer until chicken and noodles are tender. #buenprovecho😉 #sopadepollo
