Loaded Pasta Salad!

Recipe:

I box of pasta (you can use whatever style you want)

1 cup shredded carrots

1 cup frozen peas

1/2 cup frozen corn

boil pasta and veggies together in salted water until tender, approximately 10-12 minutes

Rinse with cold water until warm.

Mix together

2 cups mayonnaise (you can add more if you feel it’s

too dry)

2 packages dry ranch dressing mix

1-ish cup bacon bits (I use a full package of real bacon pieces, you can cook the bacon if you desire)

2 cups shredded cheddar cheese

1/4 cup green onions

Add warm pasta and mix until fully coated.

Poor half of the mixture to a bowl and top with some cheese, bacon and onions, gently poor the rest of the mixture on top and top with a little more cheese, bacon and onions.

Refrigerate at least 5-6 hours to fully chill, overnight is best. The longer it sits, the better it gets.

(while it looks good with the toppings and all, it’s best to mix before serving)

Thank you, and ENJOY!

While the original recipe calls for a box of your preferred pasta style, I’ve found using rotini or fusilli works well as they hold onto the dressing and cheese nicely. Adding frozen peas and corn along with shredded carrots not only boosts the color but also adds a nice crunch and natural sweetness balance to this creamy dish. When cooking the pasta and vegetables together, timing is key. Boiling them just until tender ensures they don’t become mushy after refrigeration. I always rinse with cold water to stop the cooking process early, then mix while still a bit warm so the mayonnaise and dry ranch dressing coat every bite evenly. The ranch dressing mix really elevates the flavor, giving the salad that classic tangy and savory taste that pairs wonderfully with crispy bacon bits and sharp cheddar cheese. Speaking of bacon, using real bacon pieces is my personal preference over pre-packaged bacon bits because of the texture and smoky flavor it adds. Cooking and crumbling your own bacon also lets you control how crispy or chewy you want the bits. To make this pasta salad ahead of time, it’s important to refrigerate it for at least 5-6 hours, though overnight chilling intensifies the flavors even more. Before serving, give it a gentle mix to redistribute the toppings and dressing for the best experience. I’ve also experimented with adding diced tomatoes or substituting mayonnaise with Greek yogurt for a lighter twist. Both versions turn out delicious, making this pasta salad a great customizable option depending on dietary preferences or what you have on hand. Whether you need an easy side dish for potlucks, family gatherings, or a summer barbecue, this loaded pasta salad ticks all the boxes for taste, convenience, and crowd-pleasing appeal.
