Blackened Chicken Alfredo: Quick and easy recipe!
This meal was super quick and easy but the best part about was it cost me less than $10 to make it. As you all know the government is shutdown, but if you have food stamps, they may very well be phasing it out. Spending less on food and getting tasty meals is always a win-win. Here is the cost breakdown for the entire meal and you will still have some left over chicken breast to make something else later.
Cost breakdown:
•1 ~2.3lb pack of chicken breast from target= $5.81
•1 box of Pasta Roni= $1.25
•1 Green Bell Pepper= $.89
•1 red onion= $.75
•1 pint of milk from the dollar tree= $1.25
The seasonings could already be in your cabinet. If you don’t have blackening seasoning, you will only need to get that. Here is the ingredients and the recipe.
Ingredients:
2-3 pieces of chicken breast
Box of penne Alfredo pasta roni
1.5 tbsp of blackening seasoning
1 tbsp of garlic powder
1 tbsp of onion powder
.5 tbsp of paprika
1/2 pack of sazón
.5 tbsp of complete seasoning
1.5 tbsp of olive oil
2/3 cup of Milk
.5 tbsp of black pepper
.5 tbsp of sea salt
1/4 green pepper, sliced
1/4 red onion, chopped
Directions:
1. Clean your chicken breast off and slice into strips. Later on you’re going to chop them up towards the end.
2. Season your chicken with all the dry seasonings and set it to the side.
3. Wash off your veggies and cut up your onion and green peppers. Slice the peppers and chop the onion.
4. Add olive oil to the pan on a medium high heat . Option to use avocado oil or vegetable oil if you run out of olive oil. Add the chicken to oil and cook until blackened on both sides.
5. Follow instructions on the box for the pasta roni. Once the pasta roni is cooking, I like to add a little black pepper, salt and garlic powder to add a little extra flavor to it.
6. Let pasta roni thicken a little before you combine the chicken. Once the chicken is balackened, let it cool for 3-5 minutes and then chopped into smaller pieces. Cubing the chicken is an option.
7. Add the veggies to the pot with the blackened seasoning still in it and stir the veggies until they are cooked and the onions are almost translucent on medium heat. This should take about 6-7 minutes.
8. Combine everything and enjoy!
Recommendation: get some garlic bread if you can. It will make it twice as nice 😊
