Ingredients
• 🍗 4-6 bone-in, skin-on chicken thighs
• 🌶️ 2 tbsp Caribbean Jerk marinade
• 🌶️ 1 packet Caribbean Jerk seasoning mix
• 🧂 1/2 tsp fire salt or seasoned salt
• 🧄 1 tsp garlic powder (optional for extra flavor)
• 🌶️ 1/2 red bell pepper, diced
• 🌶️ 1/2 green bell pepper, diced
• 🫒 1 tbsp olive oil or olive oil spray
• 🍚 1 cup basmati rice
• 💦 2 cups water or chicken broth
• 🧂 Salt and pepper to taste
Instructions
1. Marinate the Chicken 🍗
• In a bowl, combine the chicken thighs with the Caribbean Jerk marinade, half of the Jerk seasoning mix, fire salt, and a sprinkle of black pepper. Let it marinate for at least 30 minutes, or ideally overnight for maximum flavor.
