Lasagna Soup Recipe:
Ingredients
* 1 pound lean ground beef, (Italian sausage can be used)
* 1 cup diced onion
* 5 garlic cloves, minced
* 2 (14.5 ounce) cans diced tomatoes, undrained
* 1 (8 ounce) can tomato sauce
* 1 tablespoon of tomato paste
* 2 (16.9 oz) Kettle & Fire Beef Bone Broth (chicken broth can be substituted)
* 2 teaspoons Italian seasoning
* 1/2 cup heavy whipping cream
* 1 cup grated parmesan
* 10 uncooked lasagna noodles, broken into 1 1/2 inch pieces
Cheese Topping:
* 1 cup ricotta cheese
* 1/2 cup grated Parmesan cheese
* 2 tbsp parsley
Instructions
* In a large Dutch oven or saucepan add olive oil on medium-high heat
* Add ground beef
* Once ground beef is cooked add in diced onion
* Add in minced garlic
* Let it cook until the onion is cooked
* Stir in the diced tomatoes, tomato sauce, tomato paste, beef bone broth, and Italian seasonings.
* Bring mixture to a boil
* break lasagna pieces and mix in
* Reduce heat slightly and cook for about 10-14 minutes or until noodles are tender
* For the Cheese Topping: In a small bowl, mix together the ricotta, Parmesan, and parsley - set to the side
* Once noodles are cooked add in garlic salt to taste
* Add in 1 cup of parmesan
* Add in dollops of cheese topping
* To serve, spoon soup in a bowl and top with a dollop of the cheese mixture. Garnish with chopped parsley and grated parmesan.
