I know some people are hesitant, but trust me, when it's cooked right, it’s golden. My trick is to slice the Spam into about 1/4-inch planks or cubes, then pan-fry it until it's beautifully caramelized and crispy around the edges. That savory, slightly salty crunch is essential for balancing the soft rice. Don't be afraid to let it get a nice, deep brown – that's where all the flavor truly develops! Now, for the creamy sauce that takes it from good to absolutely divine. This is often where people miss out! While the image might just show a hint of it, my go-to is a super simple but incredibly flavorful mix. I usually combine a dollop of Kewpie mayonnaise (it’s creamier than regular mayo, trust me!), a splash of soy sauce, a tiny bit of sesame oil, and if you like a kick, a dash of sriracha. Whisk it all together, and you've got this rich, umami-packed sauce that coats every grain of rice and piece of cooked Spam perfectly. It transforms the whole dish into something truly special and comforting. As for the rice, I usually go for a medium-grain white rice, like Calrose, because it gets nice and sticky, which is perfect for soaking up all those delicious flavors.
