♥homemade mulberry cream tarts♥

baking is one of my favorite activities ever!! i love making things from scratch & my favorite desserts use fruit 🫐🍓 for natural sweetness & less carbs.

mulberries are SO slept on!! my grandmother grows them in her yard so i’ve always been blessed, but i’ve never rly seen them in grocery stores ?? i highly recommend trying mulberries, they’re sweeter than any other berry and have a fun texture! for this recipe, i optimized for mulberries, but it would be just as yummy with any kind of fruit or berry ~

*ੈ✩‧₊˚ recipe:

- store-bought dessert shells 🥮

- handpicked, fresh mulberries 🫐

- sweet cream:

- 300mL pure heavy cream 🥛

- 250mL whole milk (or milk substitute) 🐮

- 100g sugar 🍥

- 1 tsp vanilla extract (or paste) 🫘

- 3 egg yolks 🥚

- 2 Tbs flour 🫙

ੈ✩‧₊˚

mix the cream, milk, sugar, and vanilla in a small pot and bring it to a simmer. in a separate bowl, whisk the egg yolks until they are creamy and incorporate the flour fully. slowly pour the milk mixture into the egg mixture and stir constantly to avoid eggs scrambling. once combined and smooth, return mixture to low heat until it thickens. remove from heat, cover, and cool in fridge.

ੈ✩‧₊˚

once it’s cool, pour sweet cream into dessert shells to your liking. add the (washed) berries on top of the cream. i like to cool the entire dessert in the fridge for a few minutes, it’s best as a cold dish in my opinion 🥧🧁

treats like this make me happy & everyone who’s ever tried this loves it. super light, fluffy, perfectly sweet, and refreshing!!

let me know if you try this recipe! or if you’d change anything about it - always looking to improve or change things. ideally, i’d make the dessert shell from scratch too, i think any kind of pastry would be great with this recipe. i plan to try with different fruits and homemade shell soon, so stay tuned

(っ^ ▿ ^)っ~♡ i’m also going to start sharing more of my recipes and baking in general on here so lmk if you wanna see something in particular! thank u so much for reading this & sharing a love of desserts with me! :3

... Read moreYou know, when I first started making these delightful mulberry cream tarts, I realized just how underrated mulberries truly are! They bring such a unique sweetness and texture that sets these tarts apart. My grandma's yard is my secret weapon for sourcing them, but if you don't have access to a mulberry tree, don't despair! Try looking for fresh mulberries at local farmers' markets during late spring to early summer. Sometimes specialty grocery stores carry them too, though they can be a bit elusive. When picking or buying, look for plump, dark berries – that's when they're at their peak sweetness. They're quite delicate and don't last long, so plan to use them fresh or freeze them soon after getting them. While I love the convenience of store-bought dessert pastry shells, I've been experimenting with making my own homemade pastry, and it truly elevates the tart! A simple shortcrust pastry made with cold butter, flour, a pinch of sugar, and a touch of ice water can make all the difference. The key is to keep everything cold and not overwork the dough for a flaky result. Just be sure to blind bake your homemade or even store-bought shells before adding your filling to prevent a soggy bottom – nobody wants that with their beautiful mulberry cream dessert! Getting that perfectly smooth and thick sweet cream filling is another crucial step. The trick is to temper your egg yolks properly. Always pour the warm milk mixture slowly into the whisked eggs, stirring constantly. This gently brings up the egg temperature without scrambling them. If it seems too thin when returning to low heat, don't panic! Keep stirring gently, and it will thicken. A silicone whisk helps prevent sticking to the bottom of the pot and ensures a lump-free cream. Once it coats the back of a spoon, it's usually ready. And remember, it will thicken up more as it cools in the fridge. And don't limit yourself to just mulberries! While they're spectacular, this sweet cream base is incredibly versatile. I've tried it with fresh raspberries, sliced strawberries, and even a mix of berries from my local market. For a citrusy twist, a little lemon zest in the cream can be divine. You can also play with the dessert pastry – a graham cracker crust could be a fun, no-bake alternative, or even a chocolate cookie crust for a richer dessert. These mulberry cream tarts are best served chilled, making them the perfect refreshing treat on a warm day. I love them with a light dusting of powdered sugar or a fresh mint leaf for garnish. They're wonderful with a cup of afternoon tea or as a light ending to any meal. Baking these tarts from scratch, even with a few clever shortcuts, brings such a sense of accomplishment. It’s amazing how a few simple ingredients can transform into something so elegant and delicious. Happy baking, everyone!
