In a separate bowl, blend 8 ounces of softened cream cheese with confectioners' sugar until smooth, then gently fold in whipped topping. Next, prepare the pumpkin pudding layer by combining 12 ounces of evaporated milk, 15 ounces of pumpkin puree, 5.1 ounces of instant vanilla pudding mix, and ½ teaspoon of pumpkin pie spice. Layer it over the cheesecake mixture for a beautifully marbled effect. Finally, top with remaining whipped topping and sprinkle crushed graham crackers before serving.
