Fajita Chicken Casserole

Cheesy Baked Fajita Chicken Casserole with Peppers and Onions

Ingredients:

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into strips

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/4 cup chopped cilantro

Juice of 1 lime

Optional: jalapeño slices, for garnish

Directions:

Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

In a large skillet over medium-high heat, add olive oil. Sauté chicken strips until browned and cooked through, about 6–7 minutes. Remove from skillet and set aside.

In the same skillet, add sliced bell peppers and onion. Cook for 4–5 minutes until softened.

Return chicken to skillet. Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Stir to coat evenly.

Remove from heat and stir in sour cream, half the cheddar, and half the Monterey Jack cheese.

Pour mixture into prepared baking dish. Top with remaining cheeses.

Bake uncovered for 20 minutes, or until cheese is melted and bubbly.

Garnish with fresh cilantro, lime juice, and optional jalapeño slices before serving.
