Italian Sausage Soup

Italian Sausage Soup

Brown 1 pound of sausage

Remove from pan and drain fat

Add 1 cup of onion, 1 cup of celery, 1 cup red pepper and 1 cup carrot and 2 tbsp of garlic. Cook for 3-5 minutes until veggies are soft

Season with 1 tbsp of Italian seasoning, salt and pepper

Add 15 oz of Italian tomatoes and 32 oz of chicken broth

Bring this to a boil

Once boiling add in 1 cup ditalini and lower heat

Cover and cook for 10 minutes

After 10 minutes add 2 cups of spinach, stir until combined
