This low calorie dish was inspired by the 2007 Disney movie ‘Ratatouille’ right?

For those who watch the movie, I’m sure you remember the look on Anton Ego’s face when he had that first bite of ratatouille. I’ve always wanted to try this recipe and the fact that this was so easy to make and healthy makes it all the more better. 🥰

These robust flavors combined together to make a wholesome side dish or main dish is definitely something you have to try.

To all the parents out there who are struggling to get your littles ones to eat their veggies, I highly recommend putting the movie on and making this dish for them and adding some parmesean cheese on top. - Just a tip. 😉

This is a great dish if you’re looking for something with low carbs and or if you’re looking to start a weight loss journey.
