NO Carb 🥬 Lettuce Boats 🔥

Dinner tonight was light, crisp and fresh affffff 🤤

1 Avocado

2 Tbs Butter

1 Green Onion

1/2 C Mushrooms

2 Cloves of Garlic

1/2 Lb Ground Beef

4 Cherry Tomatoes

1 Tbs Fresh Ginger

1 Tbs Oyster Sauce

4 Romain Lettuce Leafs

1 Tbs Low Sodium Soy Sauce

1 Tbs Chili Crisp Oil ( Optional)

☝🏽 Brown your hamburger meat until almost done, drain grease and set aside. Add butter into pan and let it melt. Add in finely chopped mushrooms and sauté. Add ground beef in and your choice of seasonings. I used @Kinder’s caramelized onion butter and pepper! Add in ginger, garlic, soy and oyster sauce let that cook for 5 mins stirring frequently.

✌🏽 Wash your lettuce and dry with a paper towel. I thinly sliced my avocados, green onions and I quarter my cherry tomatoes. Add the beef mixture into your lettuce and throw on those avocados, tomatoes and onions.

I love to add chili crisp or a Sriracha mayo to give it that extra kick because I like my food spicy 🔥 Enjoy y'all!

... Read moreHey foodies! So glad you enjoyed my go-to no-carb beef lettuce boats! They're truly a lifesaver for busy weeknights when I want something light, fresh, and packed with flavor. But guess what? I've been experimenting with variations, and one of my absolute favorites, especially when I'm craving that zesty kick, is a low-carb turkey taco lettuce boat! Many of you asked about using turkey, and it totally works to create those delicious, clean girl recipes everyone loves. Here's my quick take on it: Instead of ground beef, I’ll grab a pound of lean ground turkey. Brown it in a pan, breaking it up as it cooks. Once it's no longer pink, drain any excess liquid. This is where the magic happens – add about 2 tablespoons of your favorite taco seasoning (I often make my own with chili powder, cumin, paprika, onion powder, and a pinch of cayenne for that extra 🔥). Stir it in with a splash of water or broth to help it coat the turkey evenly, and let it simmer for a few minutes until the flavors meld. Now for the 'boats'! Romaine boats are truly the unsung heroes of low-carb living. Their sturdy shape and crisp texture make them perfect for holding all those delicious fillings. When I'm picking my romaine, I look for firm, vibrant green heads with no wilting or brown spots. A good wash and thorough pat dry are key to keeping them crisp. If romaine isn't your thing, butter lettuce or even endive can work, though romaine really gives you that satisfying crunch. For toppings on my turkey taco version, I love to keep it fresh and vibrant. Think diced avocado, a spoonful of fresh salsa, a sprinkle of sharp cheddar or cotija cheese (if you're okay with dairy), and a dollop of Greek yogurt or a light sour cream for creaminess. A squeeze of lime juice and a sprinkle of fresh cilantro truly elevate the 'taco' experience. It transforms a simple meal into something that feels gourmet but is incredibly easy and healthy – definitely a 'clean girl' recipe staple! The beauty of these lettuce boats, whether beef or turkey, is their versatility. They're fantastic for meal prep; you can cook your protein ahead of time and store it in the fridge, then just assemble your boats when hunger strikes. They’re also a great way to use up leftover veggies. Want more crunch? Add some crushed low-carb tortilla chips or toasted pumpkin seeds. Craving more spice? A dash of hot sauce or a different chili crisp can totally change the game. They’re not just a dinner option; they make an amazing light lunch or even a party appetizer! So next time you're looking for a quick, satisfying, and low-carb meal, don't forget to stock up on romaine. These boats are a delicious canvas for so many flavors, and I find them so much more satisfying than a traditional salad sometimes. Enjoy experimenting and making them your own!
