Blueberry Bark 🫐
My 7-year-old nephew is spending a couple nights with me, so obviously I needed to have a healthy-ish freezer snack ready. 😂🫐🍫
This Blueberry Greek Yogurt Bark is ridiculously easy and SO good.
Blueberry Greek Yogurt Bark
Ingredients:
• ¾ cup vanilla Greek yogurt
• 1 tbsp honey
• Blueberries
• 1 cup chocolate chips
• 1 tbsp coconut oil
• Flaky sea salt, optional
Directions:
1. Mix the Greek yogurt and honey together, then gently fold in the blueberries.
2. Line a pan with parchment paper and spread the yogurt mixture onto the pan, gently flattening it with a spatula.
3. Melt the chocolate chips with the coconut oil using your preferred method.
4. Spread the melted chocolate over the yogurt and blueberry layer.
5. If you’re using it, lightly sprinkle flaky sea salt over the chocolate.
6. Freeze for about 5 hours, or until completely firm.
7. Break or cut into bark pieces and enjoy!
Keep this one stored in the freezer — it’s the perfect little cold, chocolatey snack. 🫐🍫
And yes, I fully plan on stealing a piece before my nephew gets here. 😂

Making homemade blueberry Greek yogurt bark is a fantastic way to create a wholesome snack that satisfies sweet cravings without overloading on sugar. When I first tried this recipe, I appreciated how the creamy vanilla Greek yogurt pairs beautifully with juicy blueberries, bringing a natural sweetness and bursts of freshness in every bite. Adding a drizzle of honey elevates the flavor while keeping it natural. One of my favorite twists is incorporating the melted chocolate and coconut oil mixture on top, which not only adds richness but also a satisfying texture contrast to the frozen yogurt. Sprinkling flaky sea salt over the chocolate is a game changer – it balances the sweetness and gives a gourmet touch. This addition, though optional, really enhanced my homemade bark's flavor complexity. Storing the bark in the freezer means you always have a ready-to-eat, refreshing snack, especially great during warmer months or after a workout. It’s kid-friendly too, making it an ideal treat when having little visitors, just like the author’s nephew. Plus, it’s so simple that you can prepare it in advance and customize toppings with seasonal fruits or nuts. From personal experience, experimenting with different honey types (like wildflower or orange blossom) can subtly change the flavor profile and keep the snack exciting. Also, using quality dark chocolate chips makes the chocolate layer more indulgent yet healthier due to the antioxidants in dark chocolate. This recipe fits perfectly into a balanced lifestyle as it combines protein from Greek yogurt, antioxidants from blueberries, and healthy fats from coconut oil. I recommend making this Blueberry Greek Yogurt Bark when you want a convenient, nutritious, and delicious snack that feels like a treat but fuels your body well.
