Ingredients: 1 cup cherry tomatoes, halved 1 cup cucumber, sliced ½ cup Kalamata olives ½ cup feta cheese, cubed 1–2 tbsp extra virgin olive oil 1 tsp red wine vinegar (optional) ½ tsp dried oregano Fresh dill or parsley (optional) Salt & black pepper to taste Instructions: Prep Veggies: Wash and slice cucumbers and cherry tomatoes. Pat dry to avoid a watery salad. Combine: In a large bowl, mix cucumbers, tomatoes, and olives. Add feta cubes gently to avoid crumbling
Dress: drizzle olive oil and vinegar (if using). Sprinkle oregano, herbs, salt and pepper. Toss gently
Serve: best served fresh or chilled,as a side or light lunch
